Ninga Anaerobic Honey - Burundi
Ninga Hill, located in Burundi's Muramvya province, is home to dedicated smallholder farmers who deliver their ripe Bourbon cherries to the Ninga Washing Station for meticulous processing. Under the guidance of station manager Agathon Ininahazwe, this lot undergoes an anaerobic honey process: the cherries are pulped and then fermented in sealed plastic "jacky bins" before drying. This method enhances the coffee's vibrant profile, resulting in a cup brimming with dried stone fruit flavors, a bright orange-like acidity, and a creamy body reminiscent of honey.
